I think it is more than 5. We had the bus filled with at least 10 clowns

for the B&A movie. Don't know the exact limit though...

I think it is 8, because you can only have 7 gang members max AFAIK in single-player...

So therefore, including CJ and the gang members the maximum vehicle size ( Without mods/hax etc. ) would only need to be 8.

But it might be able to hold more, I'm not entirely sure.

It would be nice to see (more of) this vehilces in the game:
Buffalo
Glendale (a good 4 doors vehicle) or Greenwood (Sweet's car, perfect for Coldthugz)
Hotknife
Sentinel
Stratum
Camper
Patriot
Enforcer or FBI Rancher
Combine Harvester :Y)
