Just completed the holland nights mission.

I'll do the same, why rush through a so great game like IV, instead of just playing it easy and in a slower "mode" that way the game will last longer

You can't NOT rush through it, the game goes so fast. There's hardly any missions on each island imo.

Just play a mission then play some side-missions like paramedic or what I'll do is free roam and get to know the city and try not use the taxis.
Using taxis is why the game finishes quick.

There is no paramedics missions in the game.

There isn't ANY side missions until you get onto the last island.
