The difference between jailbreaks is the security issues they exploit and techniques they use. JailbreakMe.com for instance has used two different exploits, if I remember correctly, one was a PDF exploit, and the other one was Safari-related. Something like RedSn0w uses different exploits to jailbreak the device. Both ways are just fine, but there are two different types of jailbreaks; tethered, and untethered. A tethered jailbreak is one which is lost on phone restart (useless really), and then there are the untethered jailbreaks that stay until you reformat or update the device. I used JailbreakMe.com about a year ago for the 4.0 jailbreak, but sadly these types of techniques don't come along, as the exploits aren't always related to Safari.
