I was now at 'Minigames' server, here's a fast example how it would look like:
SA:MP Racing
If you don't like the idea of having about 20 racers, like it shows in the video, increase it at least to 8.
Like it is right now:
All the servers have it with more than 4 people, actually as long as the race hadn't started everyone is allowed to teleport to the start zone to race. Oh and you could consider to add unlimited health and /nos to the vehicles as well.

- If you're too good, you win a race easily since you only have 3 opponents to race with.
- If you're too bad, you'll lose it easily since you have no chance agaisnt the others.
