I think carkills aren't that hard to avoid. If you're fighting and suddenly get ran over, you can walk away most of the time and if not you can simply /dive out.

As for heli-killing, there's indeed a menu for it already. Just one heli which doesn't trigger it somehow. Whether that's SA-MP failing or a flaw in the script, no idea.
